Fall Recipes!!

Anyone else a foodie besides me?! I am so excited to start bringing you some recipes each month! I have partnered with my friend Leslie Cady over on Instagram (IG: cady.runderful) this month to bring you some yummy new recipes! Some recipes will be from me, and some will be from her! Let’s dive in!


Pumpkin Spice Muffins

This is literally the easiest recipe ever! (I honestly don’t know if I can really call it a recipe, because it’s that easy! lol) All you need is 3 things which are pictured below.

Ingredients:

1 box spice cake

1 15 oz can of pumpkin

4 tablespoons applesauce (I used unsweetened because that’s what we had. But you can use whatever you have on hand!)

Mix all three ingredients together, spray your muffin pan, and bake for 30ish minutes on 350 degrees! That’s it!! Seriously! So easy, and SO yummy!!! (Recipe makes 12 muffins)

HEALTHY AND WHOLESOME RECIPES FROM MY FAMILY TO YOURS 

Cold and rainy, it must be November!! (one of my all-time favorite months of the year). If you are anything like me, cooler nights make me want to curl up with a blanket and indulge in classic comfort food. This week, I bring you an easy-breezy dinner & dessert: Chili, Cornbread, and Grandma’s Pumpkin Cookies with Cream Cheese Frosting.


Beef and Bean Chili serves 6

Ingredients:

2lbs ground round 1 sweet onion (chopped)

3 cloves garlic (chopped) ¼ c. chili powder

¾ tsp salt & pepper 1 -15oz can petite diced tomatoes

1-15oz can tomato sauce ½ c. water

2-15oz cans beans of your choice

Brown meat & onion in a large heavy pot over medium heat. About 10min. Add garlic & cook 3min. Add spices. Cook 1min. Add diced tomatoes, sauce, and water. Drain & rinse beans and stir into the pot until heated through. Serve with slices of avocado, sour cream, cilantro, hot sauce & of course cheese!

Notes: In a pinch, use spaghetti sauce & omit the tomatoes and sauce. If you like your chili super spicy, add cayenne, red pepper flakes, and diced jalapeños. Vegetarian? No problem, omit the meat and add more veggies & beans. Don’t care for beef? Use ground turkey or chicken. Personally, I double batch this recipe & freeze half for another night. Just make sure to label, date, and use within 3-6months.


Cornbread Cake (Bolo De Fuba’) Serves 4-6

Ingredients:

3 c. skim milk 4 large eggs

1 ½ c. yellow corn meal. 1 ½ c. sugar

1 ½ tbsp. all-purpose flour 2 ½ tbsp. unsalted butter, melted

1 tbsp. baking powder 2 tbsp. Parmesan cheese

Preheat oven to 350 & spray a 9 x 13 pan with baking spray. Add milk, eggs, corn meal, sugar, flour, and butter to blender. Mix all ingredients until well blended. Add baking powder & Parmesan cheese. Blend on a low setting or pulse for a few seconds. Pour into pan and bake 50 min or until golden brown. Cool 30 min.

Notes: Sub sugar for Stevia if desired. Gluten free? Use gluten-free flour. Lactose issues? Use your favorite milk of choice (I love unsweetened almond milk and this turned out just as fabulous!). If desired, add ½ c. corn & dust with powdered sugar. Yummy!!


Grandma’s Famous Pumpkin Cookies with Cream Cheese Frosting

Ingredients:

2 ½ c. all-purpose flour          1 tsp baking powder

1 tsp baking soda                     2 tsp cinnamon

1 tsp nutmeg                              ½ tsp salt

1 stick unsalted butter            1 c. sugar of choice

½ c. brown sugar                      1 ¼ c. can of pure pumpkin

1 large egg                                   2 tsps vanilla

 

Preheat oven to 350. Wisk and set aside first 6 ingredients. Cream butter & sugars together. Add pumpkin, egg, and vanilla. Stir in dry ingredients to wet. Spoon onto parchment paper & bake 16 min. Best eaten warm out of the oven, although if you can wait….cool & add cream cheese frosting. Store at room temperature.

 Frosting:

8oz. Philadelphia cream cheese, 3 tbsp unsalted butter, 1 tsp vanilla, 1 small box powdered sugar. Let all ingredients soften at room temperature then beat together. Frost cookies after they are cooled – about 20 min.
