What I am Baking this Holiday Season!

Ever since I was a little girl, my mom and I have always had a day where we bake all the Christmas yummies together! This is a tradition that we have continued even now. I look forward to it every single year! We always make so many good treats, so today I thought I would share a few!


White Christmas Trash

This stuff is my absolute favorite! I have no sense of moderation when it comes to this Christmas treat (aka- I will eat myself sick with it. Yes, it’s that good!). The best part? It’s so easy and literally takes no more 30 minutes from beginning to end!

Ingredients:

  • 1 jar of dry roasted peanuts

  • 6-8 cups of Corn Chex cereal (You could use plain Chex, but we’ve always used Corn)

  • 1 big package of white chocolate bark (if you cannot find that, you can use 2 bags of white chocolate morsels)

  • 1 bag of pretzel sticks

Melt white chocolate in pan over low heat. Mix the rest of the ingredients together. After chocolate is melted, pour over dry ingredients. Mix well in bowl. Spread evenly onto baking sheets. Let sit on counter until it hardens (only takes about 10 minutes). Break apart and store in sealed container or ziplock bags.


Peanut Butter Balls

Full transparency…. these never turn out like balls. My mom and I call them peanut butter blobs…. because that’s what the end up looking like. But they are DELICIOUS!

Ingredients:

  • 2 sticks of butter

  • 4 cups of crunchy or smooth peanut butter

  • 2 (1 lb) boxes confectioners sugar

  • 6 Tbsp. milk

  • 3 (12 oz) bags semi sweet morals

  • 3 Tbsp shortening

Mix peanut butter, butter and sugar. Add milk, mix it all together. Chill mixture in fridge (we usually let it sit in there at least 30 minutes). Over double boiler, melt chocolate with shortening. Dip balls until covered with chocolate. Chill on baking sheet lined with waxed paper in fridge.


Pecan Pie

This is another recipe I make every holiday season. This is actually my Grandma Clegg’s recipe, and it instantly takes me back to her kitchen in North Carolina.

Ingredients:

  • 1 deep dish pie crust (9 inch)

  • 1 cup brown sugar

  • 1./2 cup (1 stick) butter, softened

  • 3/4 cup light corn syrup

  • 3 eggs beaten

  • 1 3/4 cups pecans

  • 1 tsp vanila

  • 1/8 tsp salt

Blend sugar, butter, and syrup in cooking pan over medium heat to boil. Stirring constantly, mix mixture slowly into eggs. Then put in pecans, vanilla, and salt. Pour into pie shell, bake at 375 degrees for 30 minutes.


We also usually make some sugar and chocolate chip cookies! However, these listed above are the stars of the show!
